I used to struggle with not knowing what meals to cook and often opted for ready meals from the supermarket or takeaways to save time when I got home, tired and late from the working day.
Then one day I realised the foods I was eating were making me tired, ill and fat, so I decided to change all this by learning to cook healthy, balanced meals for myself and my family.
Over the years I have experimented with so many recipes books, delivered boxed meals, etc and got very stressed out with lots of ingredients and faff that took hours to prepare never mind cooking and then eating.
But I finally managed to create my own simple, tasty, meals that are minimal faff and plenty of variety to keep things interesting.
I also found that by planning my meals ahead of time, I not only save time but money by not buying food that will go off when I don't use it.
